Aubergine Salad with Yogurt

Aubergine (eggplant) is not appealing to the palate for some but adding yogurt will surely make this vegetable a sweet treat. This is a delicious way to introduce aubergine to the kids. Read on to know how to make Aubergine Salad with Yogurt.

Ingredients

  • 1 lb aubergines
  • 1 garlic clove finely minced
  • 1 tbsp fresh parsley chopped
  • 1 cup of natural yogurt
  • Fresh lemon juice
  • Mixed lettuce leaves

Instructions

  1. Turn on the oven to adequate heat.
  2. Place the whole aubergines in the oven and bake them until tender. Let them cool, slice and put in a bowl which already has yogurt and garlic. Blend. Put in the fridge for about one hour.
  3. Lay lettuce on a plate and place the aubergine mixture. Put a dash of fresh lemon juice and parsley.
