Ingredients
- 1 lb aubergines
- 1 garlic clove finely minced
- 1 tbsp fresh parsley chopped
- 1 cup of natural yogurt
- Fresh lemon juice
- Mixed lettuce leaves

Turn on the oven to adequate heat.

Place the whole aubergines in the oven and bake them until tender. Let them cool, slice and put in a bowl which already has yogurt and garlic. Blend. Put in the fridge for about one hour.

Lay lettuce on a plate and place the aubergine mixture. Put a dash of fresh lemon juice and parsley.
