Mediterranean Bowl Recipe
Have you ever had a Burrito Bowl at Chipotle? This is my Mediterranean version, and it's an easy dinner because everyone makes their own just the way they like it. My daughter suggests wrapping it all in a pita for a Mediterranean version of Subway. Either way, it's a delicious dinner and festive to serve for a party!

Ingredients
- *There are no specific amounts...just adjust according to how many people you are feeding.
- brown rice cooked
- garbanzo beans canned
- olive oil
- red bell pepper sliced
- purple onion sliced
- spinach chopped
- garlic minced
- grape tomatoes halved
- feta cheese crumbled
- cucumber diced
- pepperoncini peppers sliced
- kalamata olives sliced
Instructions

Prepare brown rice.

Warm the garbanzo beans.

Heat the olive oil in a large skillet and sauté the red bell pepper, purple onion and garlic until the onions are caramelized.

Stir in the spinach, just until wilted.

Season with salt and pepper.

Fill each persons bowl with brown rice, garbanzos and the spinach mixture, and then let them add the toppings of their choice - grape tomatoes, feta cheese, cucumber, pepperoncini, kalamata olives.

Serve with pita bread or pita chips if desired.
