Breaded Tofu

Ingredients
- 1 carton extra-firm tofu
- ¼ cup cornmeal
- ¼ cup wholemeal flour
- ¼ cup fine breadcrumbs
- Salt and pepper to taste

Remove the water of the tofu but retain it moist. Cut lengthwise into sixteen identical sized pieces.

Mix the cornmeal, season, breadcrumbs and flour in a bowl. Put the mixture on a shallow plate and cover both sides of the tofu completely. Sprinkle with breadcrumb on top if necessary.

Heat up olive oil in a frying pan. Fry up the tofu until they become golden brown. Flip them over for the other side to cook.

It is best served with vegetables and brown rice.
