Coconut Curry Chicken

Ingredients
- 2 tbsp olive or vegetable oil
- 4 chicken breasts cut into bite size pieces
- 2 medium onions diced
- 2 cans chopped tomatoes
- ½ cup reduced fat coconut milk
- ½ tbsp coconut optional
- 1 tbsp curry powder or more if you like it hot
Instructions

Heat up the oil and saute onion until it becomes tender.

Pour the curry powder and mix. Put the chicken breasts and cook until it becomes tender.

Add the tomatoes and wait for about one minute.

Put the coconut milk and let it simmer for about fifteen minutes.
