Chicken Chili Recipe
Frugalicious, fast and perfect for a Super Bowl Party! Serve with tortilla chips.
Servings 8
Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 onions chopped or use 1 1/2 cups of frozen chopped onion*
- 4 garlic cloves minced
- 1, 7 ounce can green chiles diced (do not drain)
- 2 teaspoons cumin
- 1/4 teaspoon cayenne pepper
- 4 cans great northern beans do not drain
- 4 cups chicken broth
- 8 oz. pepper jack cheese shredded
- 8 oz. Monterey jack cheese shredded
- optional: garnish with sour cream and diced tomatoes
- Simmer chicken in a large saucepan until tender drain and shred. Approximately 15 minutes.
- Heat olive oil and saute onions garlic, green chiles, cumin and cayenne pepper for 3 minutes.
- Add the shredded chicken beans, chicken broth and cheese.
- Simmer 15 minutes.
- Optional: garnish with sour cream and diced tomatoes.
