Arugula Toasties
Bring a nutritious twist to your usual toasted bread with arugula and feta cheese. Also known as salad rocket, arugula has lots of health benefits and is best served fresh. Kids won't mind eating their greens in this yummy dish.

Ingredients
- 4 thin slices whole grain or nut bread Use a small loaf, otherwise cut slices in half
- 4-8 thin slices of feta cheese
- A handful Arugula
- 1 tomato sliced
- Olive oil
- Freshly ground pepper
Instructions

Toast bread slices until they are lightly golden.

Place a slice of feta cheese on each piece of toasted bread.

Add arugula on top and a slice of tomato.

Drizzle with olive oil.

Sprinkle with pepper to taste.
