Chocolate Peanut Butter Sandwich Cookies
If you're a chocolate peanut butter lover...this one's for you! This recipe makes 4 dozen sandwich cookies, so that means you're baking 8 dozen individual cookies. The good news is...it's easy to cut this recipe in half!

Ingredients
- Cookie Ingredients:
- 2 sticks butter
- 2 tablespoon shortening
- 1 cup cocoa powder
- 1/2 cup chocolate syrup
- 1/4 cup peanut butter
- 3 eggs
- 2 1/2 cups sugar
- 2 teaspoons vanilla
- 2 1/2 cups flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- Peanut Butter Filling Ingredients:
- 1 stick butter softened
- 2 cups peanut butter
- 1 cup milk
- 2 teaspoons vanilla
- 2 boxes powdered sugar
Instructions

Cookie Instructions:

In a saucepan over low heat, melt butter and shortening.

Remove from heat and stir in cocoa powder, chocolate syrup and 1/4 cup peanut butter until smooth, let cool about 10 minutes.

In a large mixing bowl, beat sugar and egg for 2 minutes.

Beat in vanilla.

Beat in the chocolate mixture.

Beat in flour, baking soda and salt until combined.

Drop by rounded teaspoons, 2 inches apart, onto a parchment lined baking sheets.

Bake at 350 for 10 minutes.

Cool 5 minutes before removing to a wire rack to cool completely.

Peanut Butter Filling Instructions:

In a large mixing bowl, beat together butter, peanut butter, milk and vanilla.

Gradually add powdered sugar and beat until smooth.

Assemble the Chocolate Peanut Butter Sandwich Cookies just before serving by spreading a heaping tablespoon onto 1 chocolate cookie and top with another chocolate cookie to make a sandwich. Extra peanut butter filling should be stored in the refrigerator.
