Vegetarian Corn Chowder Recipe
Warm up with a steaming bowl of Vegetarian Corn Chowder! If you use frozen chopped bell pepper and onion, and you'll have dinner on the table in no time!

Cook Time 20 minutes
Total Time 25 minutes
Servings 4
Ingredients
- 4 tablespoons butter
- 2 cloves garlic minced
- 1 green bell pepper diced*
- 1 red bell pepper diced*
- 1 onion diced*
- ¼ teaspoon cayenne pepper
- 2, 10¾ oz. cans cream of potato soup
- 1, 8 oz. package cream cheese softened
- 2 cups milk
- 2, 15 oz. cans of sweet corn
Instructions

Melt butter.

Saute garlic, bell peppers and onions over medium heat until soft.

Stir in cayenne pepper, soup, cream cheese, milk and undrained corn.

Stir occasionally over medium heat until thoroughly heated, approx. 10 minutes.
Recipe Notes
Start with frozen chopped bell pepper and onion to cut your prep. in half!

I was watching the movie Julie /Julia this morning and I was getting the urge to bake something, so i made a quick batch of blueberry muffins- set the timer for 14 minutes- just happened to sit down at my computer – heard the oven alarm beeping (don’t know how long it had been beeping- when i ran downstairs, took out the muffins-they were dark brown- not golden. Yuck, Yuck, Dang it.!! 🙁 Well had enough batter to make 4 little muffins those were ok. I shall enjoy these. mmmm LOL 🙂
